Santorini PDO wine is a dry white from native varieties: Assyrtiko (75%), Athiri, and Aidani. It's the most impressive Greek wine, a perfect expression of the unique volcanic terroir and arid conditions. The exceptional Vinsanto dessert wine, a "descendant" of ancient Greece's passum wines, is produced on the island using traditional methods for making raisined wines. It is made from sun-dried Assyrtiko (51 %), Aidani, and Athiri grapes.
